After working for a long day, how wonderful it would be if a hot, delicious soup was placed in front of you in a short while to re-boost your energy?

When I went for Melbourne, the first night’s dinner was included this Chicken, Leek & Tomato Soup. It’s a comfy and homey soup, good for meals throughout the year.

Having come back for a while, I still miss this delicious soup. This is a quick version and I finished on the go to cure my craving. It tastes so good with any fresh French bread.

Yield: 5 to 6 serves

Chicken, Leek & Tomato Soup

Ingredients:
  • 120 gm chicken breast
  • 1 stalk leek, white part only, finely diced
  • 1 clove garlic, crushed
  • 1 Tbsp butter
  • 1 can Italian diced tomato, about 400 gm
  • 1 tsp raw sugar
  • 3 cups chicken broth
  • salt, to taste
  • pepper, to taste
  • parsley, for garnish

Method:
  1. Rinse chicken and wipe dry with kitchen papers. Cut into dices. Mix with salt with pepper.
  2. Use a large saucepan, heat butter over medium heat until melted. Add leek and stir occasionally, until fragrant, about 2 minutes. Make sure not to burn them.
  3. Increase heat to high. Add chicken and cook until colour changed. Pour in diced tomato and chicken broth. Bring it to a boil. Cover and decrease heat to low. Simmer for 5 to 10 minutes, or until chicken is softened. Season with salt, sugar and pepper. Garnish with parsley. Enjoy!

Notes:
  • Canned tomatoes, often diced and deseeded already, are very handy for making this quick soup.
  • You can use fresh tomatoes if desired. Peel and remove the seeds of tomatoes, then the acidity will be decreased, and you'll get the best results.

    I find canned tomatoes very handy too but the selection here is not as good as in the US. Or am I too picky?

  10. One particular recommendation: This particular soup, because of the creaminess of the leeks, tastes especially good and goes especially well with garlic bread rather than regular French bread. Of course, the quality of the bread you put your garlic on is still important!

  13. i made this soup the other day, and ate it with garlic bread. really lovely! the only change i made was to add a bit of oregano, and also i added a couple of eggs at the end to make the soup a little bit thicker.
