Here comes another excited news that I want to share with you all. I’m absolutely over the moon. My 2nd cookbook is officially released and hits the shelves of many large bookstores in Hong Kong.

It’s been over 3 years after my 1st cookbook, Easy Recipes-A Selection of Simple Classics, was published. Without your support, sending your feedbacks and love of my recipes, I won’t have the energy and motivation to publish another cookbook. I used to think that all is done if a dish is finished cooking and enjoyed by my loved ones, without a second thought of publishing it at all. All encouraging and kind words, from facebook, emails or blog comments, are received with my deepest gratitude. I feel so awesome, when this new cookbook is released. It's just like a lovely baby born in the family after 9 months of pregnancy as well as the labour of love.

Salmon is tasty and nourishing, widely regarded as super healthy food. It’s pretty easy to cook it. Oh well, often times, we don’t cook salmon at all simply because sashimi is super delicious. Other than enjoying sashimi, we love baked salmon very much. This baked salmon parcel was only cooked with basic and simple seasoning, yet with great satisfied results. The big fragrance of lemon and herb is so refreshing and tempting. We didn’t have any rice at all, although we are big fans of rice. I simply cooked some fresh corn cobs, green vegetables, and sweet potatoes to go with this dish. We were so full already and felt very satisfied.

It’s been a while not having steamed prawns. This is a simple and homey dish I tried in Hong Kong. I miss it so much. This dish is so simple, quick to make and very delicious. The key is to get fresh prawns. Yes, not those have been frozen for quite a long time. You’ll be amazed how tasty the prawns are after steaming. When I made this dish, I placed the prawns on a bed of vermicelli. Thus I didn’t even waste a drop of the tasty sauce released from the prawns after steaming. All goodies were absorbed by the vermicelli.

I’m getting to love one-pan dish more and more. It’s handy and save up energy to do cleaning up, just like one-plate dish. The taste of one-pan dish won’t be comprised at all, still very delicious. These chicken thighs were cooked with lemon, garlic and my favourite herds, rosemary and thyme. My kitchen was full of the fragrant smell, increasing the appetite of the whole family.

The lemon and herds cut through the meat and give you a fresh, cleansing feel. When it comes to making this dish, it’s better to use chicken thighs with skin on as the skin will help keep the meat moist. No need to worry about the oil though. The oil will be released through pan frying as a result the dish is not greasy at all.
