Ginseng Goji Chicken Soup (Instant Pot + Stove Top Recipe)

by · 3 comments
This Ginseng Goji Chicken Soup (花旗參杞子雞湯) is one of my favourite traditional Chinese ones that I enjoyed so much throughout the year. The soup is commonly simmered for long hours to intensify the flavours.

The ginseng has lots of health benefits. Study shows that ginseng can help to boost our immune system and lower blood sugar levels. Ginseng tastes a subtle bitterness, striking a balance of the sweetness of goji berries and candied dates in the soup. After seasoning with a bit of sea salt, this chicken soup tastes so good.

Tofu is one of my favourite ingredients in Chinese cooking. Although it’s cheap and common, it could be served in an elegant way to impress my family and friends, just by adding a bit of prawn/shrimp meat paste.

Steamed To Fu with Minced Prawn/Shrimp01

Every time I have this dish, I love taking a close look at the springy prawn ball sitting on top of the silky smooth tofu before taking a big bite. It’s an incredible feeling that you can feel all the flavours bursting out in your mouth at the moment you bite them.

Baked Honey Sriracha Chicken Wings

by · 2 comments
Finger-licking chicken wings are addictively good. These baked honey sriracha chicken wings are highly praised in my family. This dish is perfectly served as snacks for gatherings or personal game-watching time.

We can’t hold ourselves back from trying the first bite of these finger-licking chicken wings, especially they are dipped and coated with the Sriracha-honey sauce. The wings are not too spicy, just a slight kick from the Sriracha sauce. The honey and apple cider vinegar are giving a good balance of flavours.

Teriyaki Chicken patties01

I wouldn’t have known how nice the taste of tofu and chicken with teriyaki sauce going so well if I hadn’t run the experiment.

All of three components are blended nicely and tightly in this dish. The key ingredient to make these chicken patties tremendously moist and tender is the humble tofu, a healthy food that I often use in my cooking.

Creamy Baked Pumpkin

by · 1 comment
This creamy baked pumpkin recipe was adapted from "Cook with Jamie". Believe me, it's totally simple and delicious.

Baked Pumpkin01

I chose and cooked this creamy baked pumpkin from the cookbook “Cook with Jamie” by Jamie Oliver, because of returning the favour for my daughter’s present to me. Pumpkin is one of my favourite vegetables. More importantly, this is a no-brainer recipe and a keeper for any days throughout the year whenever I crave for a pumpkin dish.

Cook with Jamie

I only used the ingredients that I’ve stocked in my kitchen. The original recipe yields white wine, Chardonnay and coriander seeds that I skipped in my cooking.

Although I skipped these two ingredients, we’re very satisfied with the end results. This simplified version was delicious enough to make our taste buds dance.

Baked Pumpkin02

This baked pumpkin dish can be served as a side, perfectly pairing with beef steaks, lamb cutlets or baked chicken. To myself, this pumpkin dish is the superstar of our meal. Its creamy texture and deliciousness was amazingly memorable.

Prep time:
Cook time:
Yield: 3 to 4 serves

Baked Pumpkin03

Ingredients:
  • 650 gm pumpkin
  • 3/4 cup (about 200 ml) light thickened cream
  • 2 to 3 sprigs thyme
  • Parmesan cheese, to taste
  • ⅛ tsp nutmeg
  • sea salt, to taste
  • pepper, to taste
  • olive oil, to taste

Baked Pumpkin Procedures

Method:
  1. Preheat oven to 200C / 390F. Peel and deseed pumpkin. Cut into chunks. Put into a baking dish. Season with salt and pepper. Mix with thyme and olive oil. Bake in the preheated oven for 30 minutes.
  2. While baking the pumpkin, combine half of the parmesan cheese with light thickened cream. Mix in nutmeg.
  3. When the pumpkin turns soft after baking for 30 minutes, carefully remove the baking dish from oven. Pour in the cheese and cream mixture. Sprinkle the remaining cheese on top. Put into oven and continue baking for another 10 minutes, until the cheese melts and surface becomes lightly brown, bubbling arising. It’s done. Serve immediately.

Notes:
  • Fresh thyme is the best, but dried one can be used though. Nutmeg is a kind of spices, available at supermarkets. I also found nutmeg at Asian grocers with a better price.

Classic Mashed Potatoes01

This humble side dish, mashed potatoes, can make many main dishes become even more attractive and balanced.

Every family has their own version though. Some people like it having more texture of potato bits. I guess most people like it creamy, smooth and fluffy as we do.
