This time I did an experiment with a hot pot. Actually, we can use a hot pot to cook various delicious foods. As for this stewed pork ribs in Zhengjiang Style, my hot pot made the pork ribs especially tender that nearly melted when they came into my mouth.

Best of all, the Zhengjiang vinegar goes with the pork ribs wonderfully. No wonder this dish is very popular in Chinese community.

Stewed Pork Ribs Hot Pot in Zhengjiang Style



Ingredients:
  • 650 gm pork ribs
  • 4-5 slices of ginger
  • a little of spring onion or coriander (optional)
Marinade:
  • ½ tbsp light soya sauce
  • ½ tbsp Shaoxing rice wine(紹興酒)
Seasoning:
  • 5 tbsp Zhenjiang vinegar (鎮江醋)
  • 2½ tbsp sugar
  • 1 tsp light soya sauce
  • ½ cup water
  • 1 tsp ketchup
Method:
  1. Rinse and wipe dry pork ribs, then cut into pieces. Stir in marinade and leave for 15 minutes, then fry in plenty of hot oil till golden. Remove and absorb excess oil with clean kitchen towel paper.
  2. Heat earthen pot and add in some oil to sauté ginger slices, sprinkle wine and pour in seasoning. Bring ingredients to a boil, then add in pork ribs and lower heat to stew till ingredients tender and sauce thicken. Finally, stir in ketchup, sprinkle spring onion and serve in pot.

      You can get it in any supermarkets.
