Sweet & Sour Eggplant Recipe

Yield: 2 to 3 serves
Ingredients:
- 370 gm eggplant
- 1 clove garlic, sliced
- 1 red chilli, roughly chopped
- ½ cup water
- ⅛ tsp salt
- spring onion, roughly chopped, for garnish
- 1½ Tbsp Zhenjiang vinegar
- 3 tsp sugar
- 1 tsp light soy sauce
Method :
- Cut the eggplants lengthwise into three thick slices. Then cut them into 5-cm (2-inch) long strips. Add 1 teaspoon of salt into a large bowl of water. Soak the eggplant strips for about 10 minutes. Drain well and set aside.
- Heat oil in a wok over medium high heat. Saute garlic and red chilli. Add the eggplant. Stir to combine. Add some more oil if necessary, as eggplant likes absorbing oil. Pour in water. Cook with lid until the eggplant turns soft. Remove the lid and cook until the water almost dries up. Pour in the sauce. Quickly stir to combine. Season with salt. Turn off the heat. Sprinkle spring onion for garnish. Serve hot or cold. Enjoy!
Notes:
- After cutting the eggplant, immediately soak them in salted water. It will help prevent it from turning black.
- The amount of vinegar and sugar can be adjusted according to personal preference.
- The power of every stove is different. If the water dries up before the eggplant turns soft, replenish some more water.
