Snake Bean, Pork and Eggs Stir Fry

I have tried a similar side dish made by my mum before. It is made with diced green beans and scrambled eggs. The eggs are stir-fried with crunchy beans that give a mild sweetness. It is a simple and easy dish to make for your loved ones or yourself. This time I added some minced pork to add more textures and flavours.

There are two different kinds of snake beans in Hong Kong, green snake beans and white snake beans. Well, I only can get the green ones here in Australia. And green snake beans are more popular and less expensive than white snake beans. I used to make scrambled eggs with green snake beans for my family. I often dice the green snake beans and stir-fry them with eggs. This dish can make you feel full. My kids love this dish very much.

In a wok, add some oil and stir-fry the diced snake beans until fragrant and softened for a while. The heat will help the beans to bring out a hint of sweetness. Snake beans need a longer cooking time than other green vegetables. Be sure not to burn them though. Otherwise, it’d be a bitter taste. You might want to test the taste of the beans before you go ahead to stir fry with eggs, as long as you’re satisfied with the texture.

Stir Fried Eggs with Snake Beans and Pork


Ingredients:
  • 90 gm snake beans
  • 100 gm minced pork
  • 3 eggs
  • 2 tbsp water
  • ⅛ tsp salt
Marinade:
  • 1 tsp light soy sauce
  • 1 tsp corn flour / starch starch
  • ½ tsp sugar
  • 1 tsp oil


Method :
  1. Rinse the snake beans well. Wipe and dry with kitchen towels. Cut into small cubes. Mix the minced pork with the marinade. Set aside for 10 minutes.
  2. Whisk the eggs. Mix with the water and salt. Set aside.
  3. Add oil and heat wok or pan over medium-high heat. Add the diced snake beans. Stir fry until the colour is changed. Add in the marinated pork. Stir fry and cook until cooked through. Pour in the whisked eggs. Stir and cook until the egg is just cooked. Turn off the heat. Beware that the residue heat will continue the cooking. Thus, beware not to overcook the eggs. You might like to pan-fry the eggs for a longer time according to your personal preference. Serve hot immediately.


Notes:
  • When buying snake beans, try to pick those that are fleshy with firm pods.
  • If you feel any snake bean is soft and hollow, it’s not of good quality. Its colour is green. It’s fresh.
