Snake Bean, Pork and Eggs Stir Fry Recipe

Ingredients:
- 90 gm snake beans
- 100 gm minced pork
- 3 eggs
- 2 tbsp water
- ⅛ tsp salt
- 1 tsp light soy sauce
- 1 tsp corn flour / starch starch
- ½ tsp sugar
- 1 tsp oil
Method :
- Rinse the snake beans well. Wipe and dry with kitchen towels. Cut into small cubes. Mix the minced pork with the marinade. Set aside for 10 minutes.
- Whisk the eggs. Mix with the water and salt. Set aside.
- Add oil and heat wok or pan over medium-high heat. Add the diced snake beans. Stir fry until the colour is changed. Add in the marinated pork. Stir fry and cook until cooked through. Pour in the whisked eggs. Stir and cook until the egg is just cooked. Turn off the heat. Beware that the residue heat will continue the cooking. Thus, beware not to overcook the eggs. You might like to pan-fry the eggs for a longer time according to your personal preference. Serve hot immediately.
Notes:
- When buying snake beans, try to pick those that are fleshy with firm pods.
- If you feel any snake bean is soft and hollow, it’s not of good quality. Its colour is green. It’s fresh.
