Hasselback Potatoes

Hasselback Potatoes01

When time constraints or you’re busy around with preparing celebration meals for special occasions, like thanksgiving or Christmas, you may want to try these Swedish roast potatoes to go with the main. The fan-out potatoes with attached bottoms look a bit fancy and attractive on the serving table. This side dish only needs a few minutes of preparation. The rest of the job is done in the oven. The buttery oil made these roasted potatoes smell very aromatic and taste so good. You may want to peel the potatoes, but it’s not necessary. I used some already washed potatoes from a nearby supermarket for convenience. I don’t even scrub them, just rinse them instead. The flesh of the potatoes is soft and tender with crispy outside after roasting.

Cheese Tarts

Cheese Tarts01

The recent popularity of cheese tarts in Hong Kong drew my attention. I saw many people line up for hours for the tarts. I was so intrigued that I decided to make some for my family to try. I really wanted to get an “oozing” effect to amaze my husband. It wasn’t as hard as I thought!

First and foremost, know your oven and work with it. All you need to do is not to bake the cheese tarts for too long. Make sure you remove them from the oven just in time, exactly like when making molten chocolate cakes. The cheese filling is so smooth and creamy, that it goes really well with the crispy tart shells.

When the weather is getting cold, I’d think of making this popular Italian vegetable soup to warm my body up. Having said that, this soup is also suitable for any season throughout the year, as well as a saver for me on any hectic days. It’s hearty and easy to make. All I need is to put what I’ve got in my fridge or pantry to make this soup. I often like to put some canned beans to increase nutrients. This time I used four mixed beans. Simply drain them from the can and briefly cook with other ingredients. Then I’ll have more textures in the soup.

Pineapple Salsa01

I’m getting to like Salsa more and more. Salsa is a popular side dish of Mexican cuisine, easier than making any kinds of salad. Tomatoes and peppers are often used as the main ingredients. As I’ve got a beautiful pineapple sitting on my kitchen bench top, so didn’t need a second thought. I used the pineapple and tossed with other ingredients to go with my grilled chicken. Its natural sweetness with a hint of tangy taste just worked so well to balance the meat, giving you a very refreshing feel. Besides, are you curious how my grilled chicken looks and tastes like? The recipe will follow soon.

Pumpkin Prawn Risotto01

What I love risotto is its fantastic taste because the rice is cooked with yummy stock. To make risotto is pretty straight forward and simple. It only requires me a bit more of patience to stir the rice constantly during cooking. Pumpkin is really a wonderful produce that can pair up with many other foods beautifully. This risotto dish tastes even better by adding a small portion of a large pumpkin with some prawns.

Flourless Banana Pancakes (Three Ingredients)

Fourless Banana Pancakes01

You only need three ingredients to make banana pancakes. It’s flourless and gluten free. Nothing can be easier. The little bit of salt is to enhance the flavours of bananas. You can skip it though, ending up with only using two ingredients. This is another way of getting rid of the ripe bananas sitting on my bench top. The natural sweetness and fragrance of ripe bananas are the soul and spirit of the snack. They are best served hot straight from the pan. A side note, after I posted and shared this recipe on my Chinese fan page, I was glad that many readers tried and told me their babies liked this snack.
