by · 8 comments
This is a signature side dish of a popular noodle restaurant in Hong Kong, very well-known and loved by local people. Believe me, the taste of these Bandit chicken wings is wonderfully good.

Bandit Chicken Wings01

I have no clue how this dish name came up. The word of “bandit” might put some people off to try. The soul of this dish is the spice, cumin, that makes all the baked chicken wings smell pleasantly and take the whole dish up a notch.

Kimchi is a well-known Korean side dish. I always wonder why Korean people are so fond of this dish and consume it almost everyday. Armed with this easy recipe, you can make kimchi at home. It's not that difficult as you thought.

Kimchi01

Once I tried kimchi, I just fell in love with its complex flavours. Taste-wise, it’s spicy, salty and sour, mingled with a pinch of sweetness and umami. It gives you a cleansing feel. So it’s very suitable for being served as an appetizer.

We love creamy, buttery and fluffy mashed potatoes. And these simple steps will help to make this creamy mashed potato dish with ease.

Classic Mashed Potatoes01

This humble side dish, mashed potatoes, can make many main dishes become even more attractive and balanced.

Every family has their own version though. Some people like it having more texture of potato bits. I guess most people like it creamy, smooth and fluffy as we do.

Mashed Sweet Potatoes (Convectional and Convention Oven Recipe)

by · 1 comment

Sweet potatoes are super healthy, packed with nutrients, good in helping cancer-fighting, and boosting our immune system. They are tasty and versatile in cooking. I often like using them to make desserts, like this Bubur Cha Cha, or make chicken curry. Sometimes, I just throw some in my oven to cook them as snack. They are low in starch as compared with potatoes. I made this mashed sweet potatoes as a side dish to go with the lemon garlic chicken thighs as a main, that’s served with some salad. I couldn’t complain anything when having this delicious meal.

Twice-Baked Potatoes (With Tips on Shortening Baking Time)

Twice-Baked Potatoes01

Potatoes, cooked by whatever method, is my favourite food that can replace the rice in my meals. Yes, you all know that I’m a big fan of rice. For these twice baked potatoes, I’m totally willing to give up this title.

To make this dish, it takes a few more steps to scoop out the potato flesh and make the fillings. Yet, it’s worth the effort and time. This recipe is quite forgiving. The amount of sour cream or milk is totally up to you depending on how soft and creamy the fillings you like. I didn’t season the fillings with any salt at all as I found the saltiness of bacon was just enough and turned the mashed potato fillings into something I felt hooked up to.

Hasselback Potatoes

Hasselback Potatoes01

When time constraints or you’re busy around with preparing celebration meals for special occasions, like thanksgiving or Christmas, you may want to try these Swedish roast potatoes to go with the main. The fan-out potatoes with attached bottoms look a bit fancy and attractive on the serving table. This side dish only needs a few minutes of preparation. The rest of the job is done in the oven. The buttery oil made these roasted potatoes smell very aromatic and taste so good. You may want to peel the potatoes, but it’s not necessary. I used some already washed potatoes from a nearby supermarket for convenience. I don’t even scrub them, just rinse them instead. The flesh of the potatoes is soft and tender with crispy outside after roasting.

Pineapple Salsa

Pineapple Salsa01

I’m getting to like Salsa more and more. Salsa is a popular side dish of Mexican cuisine, easier than making any kinds of salad. Tomatoes and peppers are often used as the main ingredients. As I’ve got a beautiful pineapple sitting on my kitchen bench top, so didn’t need a second thought. I used the pineapple and tossed with other ingredients to go with my grilled chicken. Its natural sweetness with a hint of tangy taste just worked so well to balance the meat, giving you a very refreshing feel. Besides, are you curious how my grilled chicken looks and tastes like? The recipe will follow soon.
